Pete GottgensAs Chef/Owner and a fourth generation hotelier having grown up in South Africa, complete customer satisfaction and repeat business is very important to me. I always appreciate guests who visit me and my team in the kitchen during service, it allows us share with you our experiences and by doing this give you an idea of the passion and excitement that is generated when working with fantastic local and international ingredients.

My food is anything but classically based, the emphasis is on flavour, allowing the natural flavours and textures to dominate. My team in the kitchen is continually striving to source the best local Scottish produce available, this allows you the customer to experience food that is pure, natural and full of wonderful flavours and textures heightening all your taste sensations and continually always exciting your palate.

Food and wine should be fun, exciting, inspiring but most of all shared with friends, this is not about being pretentious, but one of life's special gifts of caring and sharing, driven by huge amounts of passion and love.

One of our aims at Ardeonaig is to produce flavour driven food, that eats as well as it looks. Inspired by simplicity, enhanced by locally traceable ingredients especially our home grown produce and those like our lamb from local farmers and crofters.

The older I get, the more I love what I do, my time in the kitchen has never been so rewarding and satisfyng and hopefully that reflects in the end result. I'm continually excited by producing food that people want to eat from often forgotten ingredients.

As a chef working in this part of Scotland, it is not only a privilege but a continual thrill to source, grow or be offered products that are some of the best in the world. I'm hugely appreciative of local farmers and suppliers that work so hard to provide us with top quality ingredients here at Ardeonaig. I truly hope that you'll enjoy Ardeonaig and all it stands for as much as I do.
